Easy Spicy Parmesan Shrimp Scampi
8 ounces angel hair pasta
1 - 12 ounce box frozen SeaPak Shrimp Scampi
1/2 cup diced onion
1 teaspoon minced garlic
1/2 cup chicken broth
1 cup heavy cream
1 cup shredded Parmesan cheese
1 - 15 ounce can petite diced tomatoes, drained
pinch red pepper
parsley, for garnish
Cook the pasta according to the package directions until al dente.
While the noodles are boiling, saute the shrimp in a large sauce pan according to the package directions. Scoop out the cooked shrimp and set aside in a covered bowl.
Saute the onions in the remaining butter in the same skillet for 2 minutes.
Add the garlic, chicken broth, heavy cream, and cheese and stir until melted and thick. Season with the red pepper to taste.
Toss the noodles with the cheese sauce. Gently stir in the tomatoes and shrimp.
Garnish with parsley and serve immediately.
