Squash Casserole
2 yellow squash, sliced
1 large zucchini, sliced
1 medium onion, chopped
1 large carrot, shredded
1 can cream of chicken soup
2 T. mayo
2 T. melted butter
1 box chicken flavored stuffing mix
1 1/2 C. shredded cheddar cheese
pinch of salt and pepper
Place the squash, zucchini and onion in a large pot of water and boil until tender. Drain well and pour into a large mixing bowl. Using a potato masher, mash the squash mixture until there are no longer any large chunks. Combine this with the remaining ingredients and mix well. Pour into a lightly greased casserole dish and bake at 350 degrees for 35-40 minutes.
