Open Face Sausage and Peppers
1/2 lb. mild Italian sausage
1 small green bell pepper, sliced
1 small onion, sliced
pinch of red pepper flakes
1 1/2 T. olive oil
6 slices fresh Italian bread

In a skillet, heat oil over medium high heat and add sausage. Using the back of a wooden spoon, break apart the sausage and cook till almost done. Add in the peppers, onions and a pinch of red pepper flakes. Continue cooking till veggies are tender and sausage is cooked through. Remove from heat. Take 3 slices of the bread (I use an Italian loaf, sliced thin) and lightly butter them and place on a plate, spoon 1/2 of the sausage mixture over the sliced bread. Repeat for 2nd portion.
