Skillet Caramel Apples
1 large apple cored and sliced into thin wedges
1 Tbsp. butter
For caramel:
1/4 c Brown Sugar
1 tsp. corn starch
2 Tbsp. water
1/3 c. half & half
1/8 tsp. kosher salt
1 Tbsp. butter
1/2 tsp. vanilla
1 Tbsp. chopped peanuts
Heat 1 Tbsp. butter in a small skillet over medium heat.
Add apples and saute 5 minutes or until apples soften and begin to brown. Remove from heat.
Meanwhile, in a small saucepan, combine Brown Sugar , corn starch, water, half & half, and kosher salt.
Cook, stirring, over medium-high heat until mixture begins to bubble and thicken.
Cook 2-3 minutes more, until mixture is a rich caramel color. Remove from heat.
Stir in 1 Tbsp. butter and 1/2 tsp. vanilla.
Pour over apples and top with chopped peanuts.
