Mandarin Orange Muffins
Mandarin Orange Muffins
Makes 1 dozen muffins.
1 11 oz can of mandarin oranges drained and chopped
1 1/2 cup of flour
1/2 cup sugar
1 3/4 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/2 cup light oil (I used canola)
1/2 cup milk
1 egg
1 grated peel of one orange
Combine dry ingredients in a bowl.
Add in oil, milk and egg. Mix well. Fold in oranges and orange peel.
Pour batter into prepared muffin tin.
Bake at 325 F for 20 minutes. Allow to cool slightly and then remove to a baking rack to continue to cool.
