BROWN SUGAR AND BALSAMIC GLAZED PORK ROAST
1 2-3lb pork loin roast
1 tsp. salt
1 tsp. thyme
1/2 tsp. garlic powder
1/4 tsp. pepper
1/2 C. water
For the Glaze:
1/2 C. water
1/4 C. balsamic vinegar
1/4 C. brown sugar
1 T. soy sauce
1 T. corn starch
Place roast in a slow cooker. Rub with salt, thyme, garlic powder, and pepper. Add 1/2 C. water around the edges. Cook on low 6-8 hours, or until pull-apart tender. During the last 2 hours of cooking, prepare glaze by combining all ingredients in a small pot and cook till it begins to thicken. Baste the roast every 30 minutes during the last 2 hours. Save some to serve over the sliced roast.
