Apple Pie Bread
Apple Pie Bread
1/3 cup brown sugar
1/2 tbsp cinnamon
Mix the above ingredients together in a small bowl and set aside.
1/2 cup white sugar
1/3 cup brown sugar
1/4 cup butter, softened
1/2 cup applesauce (unsweetened)
2 eggs. beaten
1 tsp vanilla
1 1/2 cup flour
2 tsp baking powder
1/3 cup milk
1 large or 2 small apples, peeled and chopped
1 tbsp butter, melted
Prepare an 8x4 loaf pan with nonstick spray. Set aside.
Preheat oven to 350F.
Cream together white sugar, brown sugar (1/3 cup) and 1/4 cup of softened butter until smooth. Add in applesauce, eggs and vanilla. Combine thoroughly.
Combine the flour and baking powder.
Add flour mixture and milk to the sugar/butter and egg mixture until just combined. Do not over mix.
Spread 1/2 of the batter in the bottom of the loaf pan. Sprinkle 1/2 of the chopped apples on top.
Sprinkle 1/2 of the brown sugar/cinnamon mixture on top of the apple layer.
Combine the remaining apples with the remaining batter and spread on top of the apple layer.
Sprinkle the remaining brown sugar/cinnamon mixture on top.
Bake for 40 minutes.
Remove from the oven, brush the melted butter on top, and return to the oven for another 10 minutes.
