Caramel Corn Cookies
Caramel Corn Cookies
1/2 C sugar
1/2 C butter
1 C caramel corn, chopped
1 egg
1/2 tsp almond extract
3/4 C all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 C quick cooking oats
Preheat oven to 350 degrees.
Line 2 cookie sheets with parchment paper.
In a bowl beat sugar and butter until light and fluffy.
Add in ⅓ C chopped caramel corn and egg.
Mix with a spoon, not your mixer (or the caramel corn will be broken down too much)
Add in extract. flour, baking powder, baking soda and the remaining ⅔ C caramel corn.
Stir in oats.
Form into balls and bake for 10-12 minutes or until golden brown around edges.
