ONE POT BAKED BRATS & POTATOES
2-3 Tbs oil
1 medium onion, chopped
1 small bell pepper, sliced
5-6 medium sized potatoes, sliced thin
6 - 8 bratwurst (I used beer brats)
salt & pepper to taste
Preheat the oven to 425. Heat oil over medium heat. Add onion and pepper, saute until slightly tender - about 3-5 minutes.
Turn heat up to medium-high, add more oil if necessary, then add the potato slices. Cover and cook for 3-5 minutes. Then, uncover, flip the potatoes, cover back up and cook for 3-5 more minutes.
Turn off the heat. Season with salt & pepper. Top with bratwurst and place in the oven to bake about 30-40 minutes. Flip the brats about halfway through cooking time and also stir the potatoes.
**I used my cast iron skillet to bake
