Chocolate Chip Cookie Cheesecake Bars 1 - 15.25 oz yellow cake mix 1 - egg 1/3 - cup vegetable or canola oil Preheat oven to 325 degrees. Mix the dry cake mix, egg and oil together until crumbly. Reserve 3/4 cup of the cake mixture and set aside. Press the remainder in into a 13 x 9 inch baking pan that's been sprayed with baking spray. Cheesecake Filling: 1 - 8 oz package cream cheese, softened 1 - egg 1/3 - cup sugar (I use raw sugar) 1 1/2 - cups milk chocolate or semi -sweet chocolate chips In a medium size bowl, beat together the softened cream cheese, egg and sugar. Pour the cheesecake mixture over the bottom crust. Sprinkle the remaining cake mix crumbs and chocolate chips over the top and bake for 20 - 25 minutes. Do not over bake. Store any leftovers in the refrigerator.
