LEMON-BLACKBERRY MUFFINS
3 Eggs
1 C Greek Yogurt
1/2 C Olive Oil
1 C white Sugar
1 Lb Blackberries (Or blueberries)
1 t Vanilla
Zest and juice from one lemon
Preheat oven to 350.
Beat the eggs, add those, the yogurt and olive oil to the baking mix and mix together. When you have a wet mixture, mix in the sugar and vanilla. Add the blackberries, the lemon zest and juice and mix those in.
This mixture will be thick; spoon into a buttered muffin pan. This actually made more than 12 muffins so I made a cake out of the remaining batter in a small casserole dish. You could do this or it will probably make 18 muffins. Bake at 350 for about 20 minutes.
These aren't overly sweet but perfect with coffee. If you want sweeter, increase your sugar or top them off with a glaze.
