Green Bean Salad
Green Bean Salad
2 pounds fresh green beans - trimmed
3 tsp salt
2 tbsp pepper
3 tbsp chopped fresh flat-leaf parsley
2 tbsp extra virgin olive oil
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp crushed red pepper
2 cloves garlic minced
Fill a large pot 1/2 - 3/4 way with water and bring to a boil
Add in green beans and cook until crisp tender, about 15-20 minutes
Drain and place green beans in a large bow
In a medium bowl combine remaining ingredients and pour over warm green beans
Stir to combine gently
Serve warm or chill to serve at a later date
