Apple Pie Bread
1/2 cup butter, melted
1 cup buttermilk
1 1/2 cup brown sugar, packed
1 egg, beaten
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups apples, diced
CRUMB TOPPING
1/3 cup all-purpose flour
1 teaspoon cinnamon
pinch of cloves
pinch of nutmeg
1/2 cup brown sugar, packed
2-3 Tablespoons butter, melted
Preheat oven to 325
In a medium sized bowl, stir together melted butter, buttermilk, & brown sugar.
Add in the beaten egg and vanilla extract. Stir until sugar has dissolved. Set aside.
In a large bowl, whisk the all-purpose flour, baking soda, salt and cinnamon.
Make a well in the center and pour the wet mixture into the well.
Stir just until flour is dissolved. Do not over stir .
Fold in the finely diced apples.
Grease a loaf pan and pour in the mixture.
In a small bowl add the crumb topping ingredients, except for the butter.
Whisk to combine.
Add in the butter and stir with a fork until it resembles large crumbs.
Sprinkle the crumb mixture on top of the batter.
Bake for 1 hour and 20 minutes or until toothpick inserted in the center comes out clean. Baking times may vary.
Let cool and then eat.
