Rustic Cheesy Italian Bread
1 C. warm water
1 T. instant yeast
1/2 tsp. sugar
2 C. all purpose flour
1 tsp. salt
3 T. grated parmesan cheese
1 tsp. garlic powder
1 tsp. italian seasoning
1/2 tsp. minced onion
1/3 C. shredded cheddar cheese
In a large bowl, combine the water, yeast and sugar. Allow to proof for 5 minutes till foamy. Add the flour, salt, seasonings, and cheese. Using a wooden spoon or your hand which is lightly floured (my preference) combine well. Lightly grease an 8" iron skillet with a little vegetable oil. Form the dough into a ball and place in the iron skillet, lightly brush a coating of oil on top of the dough. Cover with a clean towel and let it rise till double in size, about an hour. Place an oven proof bowl filled with water in the oven as it preheats to 375 degrees. Uncover the dough and place in the oven to bake for 35-40 minutes or until nice and golden on top. The bread should sound hollow when tapped to let you know it is done.
