Crock Pot Beef and Broccoli
Crock Pot Beef and Broccoli
1 1/2 lbs. london broil, sliced thin
1/2 small onion, sliced thin
1 large clove garlic, minced
1 C. beef broth
1/2 C. soy sauce
1/4 C. packed brown sugar
1/4 C. hoisin sauce
1/4 tsp. pepper
4 T. cornstarch
10 oz. pkg. frozen broccoli cuts or florets (partially thawed)
cooked rice for serving
softened bean threads for serving (optional)
Spray your crock pot with cooking spray. Add the first 8 ingredients, stirring to combine, cover and cook on high for 3 1/2 hours. Uncover and remove 1/4 C. of the cooking liquid and whisk it with the 4 T. cornstarch. Pour back in crock pot, stirring to combine. Add the broccoli, cover and cook for an additional 35 minutes. Serve over rice and or bean threads (I like the combination of both).
