Creamy Ranch Skillet Potatoes
4 or 5 large potatoes, peeled, cubed
1/3 cup onion, chopped
1 tbsp olive oil
1 envelope of dry ranch dressing mix
1/3 cup sour cream
2 cups milk
1 tsp parsley
Cook potatoes until al-dente. Drain.
In a skillet heat olive oil. add potatoes and onion, and cook until lightly browned.
In a small bowl combine ranch dressing mix, sour cream and milk. Whisk until combined.
Add milk mixture to the skillet and heat to a low boil. Continue to cook, stirring occasionally, until sauce is thickened. Add parsley. Serve hot.
