Skillet Chili Mac
Skillet Chili Mac
1 - 8 oz package whole grain elbow macaroni, cooked Al dente (I used Barilla Plus)
1 - lb ground turkey or beef, browned
1/2 - cup onion, chopped
1/4 - teaspoon salt & pepper to taste
1 - 14.5 oz can petite diced tomatoes
1/4 - cup homemade chili mix (recipe below) or 1 - (1.25 oz) packet Chili Seasoning mix
1 - 15 oz can light red kidney beans, drained & rinsed or
1 - 15 oz can mild chili beans
grated cheddar cheese, garnish
Using a large stock pot cook the macaroni until Al dente. In a large skillet add the ground turkey and onion and cook over medium heat.
Sprinkle with salt and pepper. Cook ground turkey until it is no longer pink and meat is crumbled; drain any grease.
Stir in diced tomatoes, beans and chili seasoning mix. Bring mixture to a boil; reduce heat to low and simmer for 10 minutes.
Drain macaroni and stir into chili mixture. Add salt and pepper to taste. Servings: 6
Homemade Chili Seasoning Mix:
1 - tablespoon all purpose flour
2 - tablespoons dried minced onion
2 - teaspoons chili powder
1 - teaspoon seasoned salt
1/2 - teaspoon dried red pepper
1/2 - dried minced garlic
1 - teaspoon sugar
1/2 - teaspoon ground cumin
Combine all ingredients until thoroughly mixed. This recipe is equal to one packet of chili seasoning mix. Store in a covered air tight container in your pantry or use immediately.
