Refreshing Italian Pasta Salad
1 1/2 C. uncooked rotini pasta
1 ear corn on the cob, boiled and kernels cut off
1 C. frozen peas & carrots, microwaved for 1 minute
1/3 C. red bell pepper, finely chopped
1/3 C. green bell pepper, finely chopped
1/3 C. sweet onion, finely chopped
1/3 C. chopped hard salami
1 roma tomato, chopped
1/4 to 1/3 C. your favorite italian salad dressing
1/4 C. shredded parmesan cheese
Cook the pasta in boiling water till tender, about 12-14 minutes, drain well and rinse with cold water. Add the pasta to a bowl and combine with the remaining ingredients. Cover and chill for 1 hour before serving.
