Unstuffed Shrimp
Unstuffed Shrimp (2 servings)
12 collasille shrimp, peeled leaving the tail on and cleaned
4 T. butter
1/4 C. diced onion
1/4 C. diced celery
1 clove garlic, minced
1/2 C. diced or shredded crab meat
1 C. crushed ritz crackers
4 T. grated parmesan cheese
Melt the butter over med. high heat and add the onion and celery, saute for 2 minutes and add the garlic cooking for 1 more minute. Remove from the heat and add the crab meat and crackers, stir to combine. Butterfly the shrimp and place 6 each in two single serving dishes or one small dish and to with all the cracker filling. Bake in a 400 degree oven for 10 minutes. Top with the parmesan cheese and return to the oven for 2 minutes.
