Fried Green Tomato Fries
1 large green tomato
1 large egg
1/4 C. milk
2 T. dill pickle juice
1/2 C. cornmeal
1/4 C. all purpose flour
1 T. cornstarch
1/4 tsp. pepper
1/4 tsp. smoked paprika
1/4 tsp. salt
vegetable oil for frying
Slice the tomatoes, then slice each piece into strips. Whisk together the egg, milk and dill pickle juice in a bowl, add the tomato strips and place in the fridge for 30 minutes. In a ziploc bag combine the remaining ingredients. Heat 1/4" oil in a cast iron skillet to 350 degrees. In batches, take some of the strips from the egg mixture and place in the baggie, shake to coat and place in the hot oil. Frying till nice and golden all over. Drain on a paper sack or paper towel lined plate. Serve with ranch dressing.
