Spicy Chicken Filet's
2, 1/2" thick boneless chicken filet's
1/3 C. pickle juice
1/2 C. flour
1 tsp. cayenne pepper
1 tsp. smoked paprika
1/2 tsp. celery seed
1/2 tsp. pepper
1/2 tsp. garlic salt
1 large egg
2 T. milk
1 tsp. hot sauce
veg. oil for frying
Place the chicken, along with the pickle juice, in a ziploc bag and place in the fridge for 2-3 hours. When ready to fry, mix the flour and seasonings together in a bowl and beat together the egg, milk and hot sauce. Heat 1/4" oil in a skillet to 350 degrees. Dip each filet into the flour then in the egg and then back in the flour, pressing to coat. Fry them for 4-5 minutes to an internal temp. of 160 degrees. Drain on a paper towel lined plate.
