Easy No Bake Peanut Butter Bars
1/2 C. salted butter, melted
1 C. finely crushed graham cracker crumbs
2 C. powdered sugar
1 C. plus 2 T. creamy peanut butter
1 C. semi-sweet chocolate chips
Line a 9x9 baking dish with parchment or wax paper. Combine the butter, cracker crumbs and powdered sugar. Stir in 1 C. of the peanut butter and combine well. Spread in the bottom of the pan. Add the chocolate chips and remaining peanut butter to a microwave safe bowl and microwave in 30 second intervals till melted. Spread over the top. Cover with plastic wrap and place in the fridge for 2 hours. Use the paper to lift the bars out of the pan and then slice in squares. Store in an airtight container in the fridge.
