Blueberry Crisp
3 cups fresh or frozen blueberries
3 Tbsp. sugar
1 Tbsp. cornstarch
3 Tbsp. water
1/3 cup old-fashioned oats
1/3 cup brown sugar
3 Tbsp. all-purpose flour
2 Tbsp. chopped almonds
1/8 tsp. ground cinnamon
3 Tbsp. cold butter
Vanilla ice cream
Place blueberries, sugar, cornstarch, and water in a pot on stove top. Turn heat to medium and cook until the small amount of liquid thickens, stirring constantly. Pour into 9-inch baking dish.
In a small bowl, mix oats, brown sugar, flour, almonds, and cinnamon. Cut in butter until it resembles coarse crumbs. Sprinkle over blueberry mixture.
Bake at 350°F 20-30 minutes. Serve hot with a scoop of vanilla ice cream on top. Yield: 4 Servings.
