Mandarin Orange Muffins
Mandarin Orange Muffins
1 11 oz can of mandarin oranges drained and chopped
1 1/2 cup of flour
1/2 cup sugar
1 3/4 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/2 cup light oil (I used canola)
1/2 cup milk
1 egg
1 grated peel of one orange
Combine dry ingredients in a bowl.
Add in oil, milk and egg. Mix well. Fold in oranges and orange peel.
Pour batter into prepared muffin tin.
Bake at 325F for 20 minutes. Allow to cool slightly and then remove to a baking rack to continue to cool.
