Chicken with Mushrooms and Spinach
4 chicken thighs (butterflied)
1 C. sliced button mushrooms
4 C. fresh baby spinach
1/4 C. heavy cream
2 T. unsalted butter
1 2 T. olive oil
pinch of salt and pepper
Heat oil over medium high heat in a skillet. Season chicken with salt and pepper, place in the heated pan and brown on each side about 6-7 minutes. Cooking to an internal temp. of 160 degrees. Add in the mushrooms, spinach, butter and cream. Stir to combine and cook for an additional 5-6 minutes or until mushrooms are tender and spinach is wilted. Season with salt and pepper to taste.
