Coconut Pecan Minute Cookies

Coconut Pecan Minute Cookies 2 1/2 cup sugar 1/2 cup evaporated milk 1/2 cup corn syrup 1/2 cup butter 1 tsp vanilla 2 1/2 cup chopped pecans 2 cup shredded coconut Combine milk, corn syrup, sugar and butter in a sauce pan. Bring to a boil over medium/high heat. Cook to a soft ball stage (240 degrees on your candy thermometer (see note) Remove pan from heat and add vanilla, coconut and chopped pecans. Stir continuously until the mixture begins to cool and thicken. Drop by tablespoon onto wax paper and allow to cool. Note: As with other minute/no-bake cookies it is important that you boil the sugar mixture to the exact temperature in order for them to set properly.
