Unstuffed Chicken Bake

Unstuffed Chicken Bake 6 boneless, skinless chicken breast (just a little thicker than a cutlet) 5 T. butter, melted 2 T. mayo 1/4 tsp. pepper 3 "fresh size" packs of ritz crackers crushed (approx. 45 crackers) 5 green onions, chopped 2 cloves garlic, finely minced 4 strips bacon, cooked and crumbled 1/4 C. grated parmesan cheese Line a baking sheet with a silpat or parchment paper. Place the chicken on the baking sheet, making sure they are lined close together. Mix together 1 T. of melted butter, the mayo and pepper. Brush each piece of chicken all over with the mixture (this keeps the chicken nice and moist). Mix together the remaining butter and all other ingredients well. Spoon over the chicken, pressing lightly. Cover with tinfoil and bake in a 375 degree oven for 25 minutes. Uncover and bake and additional 7-8 minutes till topping is nice and golden brown.
