Simply Delicious Zucchini Casserole
2 T. butter
3 medium size zucchini sliced thin
1 small onion, chopped
8 oz. chopped water chestnuts
10.5 oz. can cream of chicken and mushroom soup (the combined soup, not two soups)
1/4 C. mayo
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
2 C. shredded cheddar cheese
2 C. crushed flip side thins (Town House) or Ritz crackers
3 T. butter, melted
Melt the butter in a skillet over med. high heat. Add the zucchini and onions to the skillet and cook till any liquid in the skillet has evaporated (if zucchini was previously frozen there will be a good bit of liquid that needs to evaporate) and the veggies are good and tender. Remove from the heat and stir in the next 7 ingredients. Pour into a lightly grease 2 quart baking dish. Bake in a 350 degree oven for 45 minutes. Meanwhile, combine the crackers and butter. After 45 minutes, remove the casserole and top with the crackers. Return to the oven for 5 minutes. Let sit for a few minutes before serving.
