One Pot Italian Sausage and Rice Skillet
1 T. olive oil
1 lb. mild italian sausage links, 1/2" sliced
1 T. butter
1 medium onion, chopped
2 bell peppers (your color choice, I used orange and yellow), chopped
2 cloves garlic, minced
1 C. jasmine rice (regular long grain would work also)
1 1/2 C. water
10 oz. frozen broccoli cuts
8 oz. tomato sauce
1 T. better than bouillon
1 tsp. italian seasoning
1/4 C. grated parmesan cheese
Heat the oil in a large skillet over med. high heat. Add the sliced sausage and cook for 5-6 minutes to brown it just a tad. Remove the sausage to a plate and add the butter to the skillet along with the onion and peppers, cooking for 6-7 minutes. Add the rice and garlic to the skillet, stirring and cook for 1 minute then add the water, broccoli, tomato sauce, bouillon and italian seasoning. Stir to combine then add the sausage back to the skillet, cover and reduce the heat to low, cooking for 20-25 minutes, stirring occasionally, until rice is tender. Stir in the parmesan cheese just before serving.
