Golden Buttermilk Fried Shrimp
1 lb. large shrimp, peeled and cleaned
1/4 C. buttermilk
3 T. dill pickle juice
1/2 C. all purpose flour
1/4 C. cornmeal
1/4 tsp. salt
1/4 tsp. pepper
vegetable oil for frying
Put the shrimp in a bowl and add the buttermilk and pickle juice. Cover and put in the fridge for 2 hours. Put the flour, cornmeal, salt and pepper in a ziploc bag. Take the shrimp and drain off the liquid, add the shrimp to the flour mixture, seal and shake to coat really well. Heat 1" of oil in a skillet to 350 degrees. Fry the shrimp, in batches if necessary, about 3 minutes till nice and golden, drain on a paper towel lined plate.
