Fried Squash
Fried Squash
1 large squash
1/2 med. onion, sliced
1 large pod banana pepper, seeded and sliced (optional)
1 T. bacon grease
1 T. butter
salt and pepper to taste
Melt the grease and butter in an iron skillet over med. high heat. Add the onion and cook for 2-3 minutes. Add in the squash and pepper, reduce the heat to med. low, cover and cook for 15 minutes, stirring occasionally. Uncover and season with salt and pepper, turn the heat up and fry the squash for 3-4 minutes until nicely browned.
