Crock Pot Cheeseburger Hash
1 lb. ground beef
1 med. onion, chopped
2 cloves garlic, minced
1 T. soy sauce
10.5 oz. cream of mushroom soup
1/2 tsp. paprika
1/2 tsp. oregano
3 med. potatoes, cut into small cubes
1 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
10 oz. can diced tomatoes with green chiles, undrained
1 C. grated colby jack cheese
6 slices bacon, cooked and crumbled
Brown the ground beef in a skillet, about 3/4 of the way through add the onion and garlic and cook the meat through. Drain well, remove from the heat and stir in the soy sauce, soup, paprika and oregano. Combine well. Spray your crock pot with cooking spray. Put the potatoes in the bottom of the pot and toss with the house seasoning. Spoon the meat mixture over the potatoes, add the diced tomatoes and half of the cheese. Stir to combine, cover and cook on high for 3 hours. Uncover and stir in the remaining cheese and the bacon. Cover to allow the cheese to completely melt before serving.
