Chili Cheese Cornbread
Chili Cheese Cornbread
bacon grease
1 1/2 C. self rising cornmeal
1/2 C. self rising flour
14.75 oz. can creamed corn
2 large eggs, beaten
4 oz. fire roasted diced green chilies
4 T. butter, melted
1 C. shredded cheddar cheese
1/3 C. milk
Generously grease a 10" iron skillet with bacon grease and place it in the oven as it preheats to 425 degrees.
In a bowl, mix together the remaining ingredients until smooth. Remove the iron skillet from the preheated oven and carefully pour the batter in the skillet. Return to the oven and bake for 25-28 minutes.
