Chicken & Veggie Pasta
Chicken & Veggie Pasta
1 T. olive oil
1 T. butter
1 large boneless, skinless chicken breast cubed
1 C. sliced zucchini
1 C. rough chopped cabbage
1/2 C. rough chopped red bell pepper
1/3 C. rough chopped onion
2 T. soy sauce
1 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
a couple good handfuls of thin spaghetti, boiled and drained
salt to taste
Heat the oil and butter in a skillet over med. high heat. Add the chicken, cooking for 5 minutes, stirring often. Add the remaining ingredients, minus the pasta and cook for an additional 6-8 minutes until chicken is cooked through and veggies are tender. Stir in the pasta during the last minute to warm through and combine with the chicken and veggies. Season with salt to taste.
