Cheesy Smoked Sausage & Potato Bake
3 russet potatoes, washed and cut into bite size cubes
1 medium onion, cut in half and sliced
14 oz. pkg. smoked sausage, sliced
1 T. olive oil
1 T. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
1 tsp. dried oregano
1/2 tsp. salt
10.5 oz. cheddar cheese soup
1/2 soup can milk (use the empty soup can to measure)
3/4 C. shredded cheddar cheese
1 tsp. smoked paprika
Spray a 9x13 baking dish with cooking spray. Add the potatoes, onions and sausage. Drizzle the olive oil over this and toss with your hands to coat. Sprinkle in the house seasoning, oregano and salt and toss again. Whisk together the remaining ingredients and spoon over the top, spreading to cover. Cover with tinfoil and bake in a 375 degree oven for 50 minutes. Uncover and continue to bake for an additional 20-25 minutes or until the potatoes are nice and tender. Let the dish sit for 5 minutes before serving
