Cabbage & Noodles Skillet
2 1/2 C. dry egg noodles
1 lb. breakfast sausage
1 small onion, halved and thinly sliced
3 C. chopped cabbage
14.5 oz. can diced tomatoes with juice
3 T. butter
salt and pepper to taste
Cook the noodles in boiling water till tender, drain and set aside. Meanwhile, begin browning the sausage in a skillet over med. high heat, breaking it up as it cooks. About 1/2 way through browning add the onion, cabbage and diced tomatoes with the juice. Cook for 20 minutes (longer if you want softer cabbage). Stir in the noodles and butter till melted. Season with salt and pepper to taste.
