Baked Parmesan Zucchini Wedges
Baked Parmesan Zucchini Wedges
1 zucchini (mine was about 8" long)
1/2 T. olive oil
1/4 C. grated parmesan cheese
1 tsp. ground turmeric
1 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
1/4 tsp. smoked paprika
salt for finishing
Wash the zucchini then cut it in half and each half into wedges. Dry it well with paper towels then toss the zucchini with the olive oil. Combine the remaining ingredients, minus the salt, and roll each zucchini in the mixture and place on a baking sheet lined with parchment paper. Bake in a 400 degree oven for 20 minutes. Remove and sprinkle with a little salt.
