Mashed Potato Bake
5 med. russet potatoes, peeled and cut up
1/2 stick butter
1 C. grated mozzarella cheese
1/3 C. parmesan cheese
1/2 C. half and half
1/4 tsp. garlic powder
1/4 tsp. pepper salt to taste
Topping:
2 T. butter, melted
1/3 C. panko breadcrumbs
1 1/2 T. parmesan cheese dried basil
Cook the potatoes in boiling water until tender, about 15 minutes. Drain the potatoes well. Add in the butter and mash the potatoes well with a potato masher. Stir in both cheeses, half and half, garlic powder, pepper and salt. Pour into a buttered 2 quart casserole dish. Combine the butter, panko and parmesan cheese. Spread over the top of the potatoes. Sprinkle with a little dried basil. Bake in a 400 degree oven for 15-20 minutes or until the topping is golden brown.
