FLORIDA ORANGE CAKE
For the Cake
1 (18 1/4 ounce) yellow cake mix
1 cup orange juice
3 eggs
1/3 cup water
1/3 cup vegetable oil
For the Frosting
1 (8 ounce) cream cheese, softened
1/4 cup butter, softened
1 tablespoon orange marmalade
3 cups powdered sugar
Preheat oven to 350 degrees F & grease a 13"x9" glass baking dish.
FOR THE CAKE: In large bowl, combine cake mix, orange juice, eggs, water & oil.
Beat on low speed 30 sec, and for 2 mins on medium.
Pour into prepared baking dish, & bake 30-35 mins or so long as toothpick inserted near center comes out clean.
Cool to room temperature on wire rack.
FOR THE FROSTING: In small bowl, beat cream cheese & butter so long as smooth.
Add marmalade & powdered sugar & beat well.
Spread over cake, and store in refrigerator so long as ready to serve.
