Ritzy Apple Pie
Ritzy Apple Pie
6 medium to large apples (mine were Fugi)
1/2 C. water
1/3 C. packed brown sugar
1/3 C. regular sugar
2 T. cornstarch
1 T. butter
1 tsp. apple pie spice
1/2 tsp. vanilla extract
1, unbaked 9" pie shell
Topping:
3 T. butter, melted
2 fresh stacks ritz crackers (approx. 26 crackers) crushed
1/3 C. shredded cheddar cheese
Peel the apples and slice them very thin. Put the apples and the next 7 ingredients in a pot and bring up to a boil, stirring to combine. Reduce the heat to med. low and cook for 12 minutes, stir often. Pour the mixture into the pie shell. Mix together the topping in a bowl and spoon over the apples. Bake in a 350 degree oven for 30 minutes.
