Marshmallow Pecan Sweet Potatoes
Marshmallow Pecan Sweet Potatoes (1-2 servings)
1 sweet potato
1 T. butter
1 T. pecan pieces
1 1/2 tsp. honey
1 tsp. heavy cream
pinch of ground cinnamon
pinch of salt
10 mini marshmallows
Wash the sweet potato and take a fork and prick holes all over it. Wrap in a paper towel and microwave it for 6 minutes. Carefully remove the potato and half it. Scoop out the flesh to a bowl. Place the potato skins on a baking sheet. To the bowl of potatoes add the butter, pecans, honey, cream and seasonings. Mix to combine well. Divide the mixture between the two skins then press 5 marshmallows in each one. Bake in a 350 degree oven for 10 minutes. Pop under the broiler to toast the tops of the marshmallows (if desired). Stir with a fork to serve.
