Cajun Potato Salad
Cajun Potato Salad (2-3 servings)
2 medium russet potatoes, peeled and cut into bite size pieces
2 large eggs, hard boiled and chopped
3 T. diced onion
3 T. diced celery
1 T. diced dill pickles
1 T. sweet pickle relish
3 T. mayo
1 T. stone ground mustard
1/2 tsp. cajun seasoning
salt and pepper to taste
pinch of smoked paprika
good pinch of dried dill
Cook the potatoes in boiling water until fork tender, drain and run under cool water to stop the cooking process. Combine all the ingredients with the potatoes. Chill for 30 minutes prior to serving. Will keep up to two days
