Amazing Flourless Chocolate Cookies
3 large egg whites, room temperature
2 tsp. vanilla extract
3 C. powdered sugar
2/3 C. unsweetened cocoa powder
1/4 tsp. salt
4 oz. semisweet chocolate bar, chopped
1 C. chopped pecans, optional
Whisk the egg whites till frothy, set aside. Sift together the powdered sugar, cocoa powder and salt into a bowl. Stir in the frothy egg whites and vanilla, combine well. Stir in the chopped chocolate and pecans. Drop by big spoonfuls onto a lightly greased baking sheet about 3" apart. Bake in a 350 degree oven for 8-10 minutes until tops are shiny and cracked. Let cool 5 minutes on the baking sheet then transfer to a cooling rack. Store in an airtight container. Makes approx. 15-20 cookies
