Crab Salad
Crab Salad (this recipe is for 1-2 servings)
3 oz. imitation crab, chopped (I used the new Seafood Snackers)
3 T. celery, finely diced
1 green onion, chopped
1 T. diced pimentos
1 T. chopped dill pickle
1/4 tsp. dried dill
1/2 tsp. dried parsley
a pinch of salt and pepper
1 T. mayo
splash of (1-2 drops) rice vinegar (optional, I like it but you may not)
Combine all ingredients in a bowl, cover and refrigerate for 1 hour before using.
