GARLIC ROASTED SHRIMP

GARLIC ROASTED SHRIMP 1½ pounds large shrimp peeled, deveined 3-4 garlic cloves, minced 1½ tablespoon olive oil 1/2 teaspoon crushed red pepper flakes (1 teaspoon if you like spicy) ½ kosher salt ½ fresh ground pepper 1 lemon, juice of 2 teaspoons chopped parsley cocktail sauce (if serving as an appetizer) Preheat oven to 425°F. Spray a large baking sheet with cooking spray or line with parchment paper. In a large bowl toss shrimp with garlic, oil, crushed red pepper flakes, salt and pepper to coat. Arrange the shrimp on prepared baking sheet in a single layer. Roast shrimp for 8-10 minutes until no longer translucent. Squeeze lemon over the shrimp and garnish with parsley. Serve immediately with rice, pasta, on a salad or as an appetizer with cocktail sauce.
