Turnip Greens (using frozen greens)
3 strips bacon
16 oz. frozen turnip greens
1/2 to 1 C. chicken stock (more if you want more pot liquid)
splash of apple cider vinegar
1 T. brown sugar
pinch red pepper flakes
4-5 dashes hot sauce
salt and pepper to taste
Slice the bacon into bite size pieces, place in a med. size pot and cook till crisp, drain half of the bacon grease, leaving the remainder in the pan. Add in the frozen turnip greens (do not thaw first). Add 1/2 C. chicken stock to start. Cover and let the greens unfreeze themselves. Add a little more stock so that the greens are sort of simmering in it. Add the vinegar, brown sugar and red pepper flakes. Reduce the heat to low and cook, covered, for 25 minutes. Stir occasionally, and add more stock if they begin to loose liquid in the bottom of the pot. Taste for tenderness of the greens, cook more if needed and then add the hot sauce, salt and pepper before serving.
