Cake in an Electric Skillet
1 box cake mix
tinfoil
1 small roasting rack (I used one that came with my toaster oven cooking set)
cooking spray
Place a sheet of tinfoil in the bottom of your electric skillet and then put the small roasting rack on top. Turn it on to 375 degrees and put the lid on. Meanwhile, beat together your cake mix using the directions on the box. Spray a 9x9x2 baking pan with cooking spray. Pour in the batter to fill the pan just over halfway full. There will be a little batter left which I put in a cup and fried up with our pancakes this morning. Put the baking pan on the rack inside the electric skillet and cover. Cook for 1 hour then crank the heat up to 400 degrees and cook for 1 more hour. The cake will pull away from the side of the pan and spring back when touched. It will seem moist on top...you can see where I touched it, remove the lid and let it cool a bit in the skillet, and that moisture will evaporate.
