Cola Burgers

Cola Burgers 1 egg 1/2 cup cola, divided 1/2 cup crushed saltine 6 tablespoons French dressing, divided 2 tablespoons grated parmesan cheese 1/4 teaspoon salt 1 1/2 lbs hamburger hamburger bun Combine the egg, 1/4 c. cola, crackers, 2 tbsp. dressing, cheese and salt. Add the beef and mix well. Shape into six patties. In a bowl, combine the remaining cola and dressing. Grill patties, uncovered, for 3 min. a side. Brush with cola mixture. Grill 8-10 min. longer or until juices run clear basting and turning as needed. Serve on buns.

Green Velvet Cake

Green Velvet Cake 1 1⁄2 cups oil 2 eggs 1⁄2 teaspoon green food coloring 1 tablespoon vinegar 1 cup buttermilk 1 1⁄2 cups sugar 1 teaspoon vanilla extract 2 1⁄2 cups flour 1 teaspoon baking soda 1⁄4 teaspoon salt Combine eggs, sugar, oil and vinegar in bowl. Mix well. Sift flour and soda together. Add to egg mixture alternately with buttermilk, mixing well after each addition. Blend in vanilla and food coloring. Pour into 3 greased and floured 8 " cake pans. Bake at 350 for 25 minutes. Cool. Frost between layers, top and side of cake.

Cheesy Green Beans with Bacon

Cheesy Green Beans with Bacon 4 cups of Fresh green beans washed and ends trimmed off 5-6 Slices Thick sliced Bacon 6 Scallions (green onions) chopped coarsely. 1 1/2 cups Shredded Cheddar Cheese ( though this will be good with any choice of cheese!) 1/3 Cup Mayonnaise 1/3 Cup Sour Cream Salt and pepper to taste.. Preheat oven to 325° Place green beans in a pot of Boiling water and boil for a minute or two..(Do not over cook) When done add green beans to a greased baking dish and set aside. Cook Bacon slices till just about crispy and remove from pan and crumble when cool. Add Scallions to fry pan and toss for a minute or two in bacon grease and remove from heat. Add to Green beans with crumbled Bacon. In a medium bowl mix together Mayonnaise, Sour Cream and 1/2 cup of Cheddar (reserve 1 cup for topping) Mix together Green beans with Mayonnaise mixture and top with remaining cup of Cheddar. Bake for 40 minutes or until green beans are tender.

Ravioli Lasagna

Ravioli Lasagna 1-20 oz bag of cheese ravioli, thawed 1-10 oz box of frozen spinach (thaw and squeeze out the water in a towel) 1 1/4 cup of your choice of spaghetti sauce 2 mozzarella cheese (I used regular but if you want you can use low fat) Preheat oven to 350°. Spread 1/4 cup of sauce in the bottom of the casserole dish. Then layer 1/2 of the ravioli, the spinach, 1/2 cup of sauce, 1/2 of the mozzarella cheese, the other half of the ravioli, the rest of the sauce and the rest of the cheese. Top with parmesan cheese. Bake covered for 40 min, then take aluminum off and bake for another 15 min. Servings: 8

Simple Macaroni and Beef with Cheese

Simple Macaroni and Beef with Cheese 1 large onion, diced 1 tablespoon canola oil salt to taste optional seasonings: black pepper, oregano, cumin, coriander, chopped garlic, hot smoked paprika, chilli powder—whatever you’re in the mood for 1 28-ounce can whole tomatoes, pureed in the can with a hand blender or in a blender blender 2 pounds lean ground beef 1 box macaroni 1 cup each grated cheddar and mozzarella cheeses Sweat the onions in the oil with a three-fingered pinch of salt. Add the beef and cook it, breaking it up as you do. (Because my beef was very fatty, I cooked it separately and added it to the pot along with the tomatoes. Also an option, but uses an extra pan.) Add another three-fingered pinch of salt or two, along with any dry seasonings you want. Add the tomatoes and any fresh seasonings you may be using, bring to a simmer, then reduce the heat to low and cook for an hour. Cook the macaroni in boiling water till it’s half done. Drain it and add it to the tomatoes. (I wanted this to stretch into two meals, so I used the whole box, but if you want your dish to be very tomatoey and beefy, you might want to add only half the macaroni). Stir it into the sauce. Taste it. Add more salt and other seasonings as needed, and cover. When it’s cooled and the pasta has absorbed the tomato juices, transfer it to a large baking dish and cover it with foil. It can sit out for several hours like this, be refrigerated for up to two days, or frozen a few weeks. Bake it in a 400 degree oven till it’s piping hot (about 45 minutes if it’s cold to room temperature). Just before you’re ready to eat, remove the foil, cover macaroni with the cheese and broil till it looks beautiful.

Taco Pasta Bake

Taco Pasta Bake 3/4 bag ziti noodles, 1 lb of ground beef, 1 pkg taco seasoning, 1c. water, 1/2 pkg cream cheese, 1 1/2 cup shredded cheese -- Boil pasta until just cooked, brown ground beef & drain, mix taco seasoning & 1 cup water w/ ground beef for 5 min, add cream cheese to beef mixture, stir until melted & remove from heat, put pasta in casserole dish, mix in 1 cup cheese, top pasta/cheese with beef mixture & gently mix, top w/ remaining cheese, bake at 350* uncovered for 30 min

BERRY WAFFLE-SANDWICHES

BERRY WAFFLE-SANDWICHES MAKES 2 SERVINGS. 2 oz cream cheese 2 tsp brown sugar 1/8 tsp cinnamon 1/2 cup sliced strawberries 4 frozen waffles, toasted Place first 3 ingredients in a bowl, beat until blended. Fold in berries. Spread 3 tbs cream cheese mixture over each of 2 waffles, top sandwiches with remaining 2 waffles. SERVE & ENJOY...
