Cinnamon Rock Candy

Cinnamon Rock Candy

1 cup water
3 3/4 cups sugar
1 1/4 cups light corn syrup
1 teaspoon red liquid food coloring
1 teaspoon cinnamon oil
1/3 cup confectioners' sugar

Line a 15-in. x 10-in. x 1-in. baking pan with foil; butter the foil and set aside. In a large heavy saucepan, combine water, sugar, corn syrup and food coloring. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve sugar crystals.
Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300 degrees F (hard-crack stage), about 25 minutes. Remove from the heat; stir in cinnamon oil (keep face away from mixture as odor is very strong). Immediately pour onto prepared pan. Cool completely, about 45 minutes.
Break the candy into pieces using the edge of a metal mallet. Sprinkle both sides of candy with confectioners' sugar. Store in airtight container

Pumpkin Pecan Dump Cake

Pumpkin Pecan Dump Cake

1 - 29 oz can pumpkin puree
1 can evaporated milk
3 eggs
1 cup sugar
3 tsp ground cinnamon
1 tsp salt

Mix all the above ingredients and pour into a greased 9" x 13" baking pan.

Sprinkle on top of batter:

1 box yellow cake mix
1 cup chopped pecans
3/4 cup butter, meted

Sprinkle one yellow cake mix over the top of the batter and chopped
pecans and then drizzle 3/4 cup melted butter top of cake mix and nuts.

Bake in preheated 350 degrees F., oven for 50 minutes. It may still be a
little
giggly in the center when you remove it from the oven, but it firms up
as it cools.

Serve with whipped cream or vanilla or cinnamon ice cream. This is
really best if you bake it a day or two ahead of time.
