MAPLE CINNAMON GRANOLA

MAPLE CINNAMON GRANOLA 2 cups old fashioned oats 1½ teaspoon cinnamon ⅓ cup maple syrup 3 tablespoons canola oil Preheat oven to 400 degrees F. Line baking sheet with parchment paper. Mix all ingredients in a medium size bowl. Spread evenly on baking sheet. Bake for 8 minutes. Remove from oven and let it rest for 10 minutes. Break apart and ENJOY!

Baked Ravioli

Baked Ravioli 1 25 oz. (1 lb) frozen cheese ravioli 1 24 oz. jar marinara or spaghetti sauce 1 1lb. ground beef 1 tsp. dried basil 1 T. minced garlic 1/2 tsp. dried parsley 8 oz. shredded mozzarella cheese 1/4 C. parmesan cheese Brown ground beef and drain, add in 1 C. of the pasta sauce, garlic and basil. Remove from heat and set aside. Bring a large pot of water to a boil and cook ravioli according to pkg. directions. Drain and return to pot and add in remaining pasta sauce. Stir to combine. Spray a casserole dish with cooking spray and layer 1/2 of the ravioli in the bottom. Top with all the beef mixture and spread around. Top with 1/2 of the mozzarella cheese and 1/2 of the parmesan cheese. Layer the remaining ravioli on top and top with remaining cheeses. Sprinkle with parsley. Bake at 350 degrees for 20 minutes, turn on the broiler and broil for 2 minutes or until top is browned somewhat.

Pecan Pie Bark

Pecan Pie Bark Ingredients: 2 sticks butter 1 cup white sugar 1 & 1/4 cups pecan halves About 2 packages (approx. 12 sheets) honey graham crackers Preheat oven to 325 degrees F. Lay graham crackers tightly across the area of a lightly greased rimmed baking sheet. Trim any crackers to fit the sides of the pan if needed. Set Aside. In a large saucepan, bring butter, sugar, and pecans to a boil over medium heat for 3 minutes, stirring constantly. Carefully and evenly pour boiled mixture over the entire plane of graham crackers, spreading pecans around evenly. Immediately pop graham crackers into the oven and bake for 8 minutes. Allow graham cracker bark to cool completely before breaking into pieces. Store in an airtight container. Eat one and give away the rest!

One Pan Jambalaya

One Pan Jambalaya Serves 8 1 lb smoked turkey sausage, sliced thinly 2 boneless, skinless chicken breasts, cut into bite size pieces 1 tsp salt 1 tsp pepper 1 tsp chili powder 2 tbsp butter 2 tbsp flour 1 small onion, chopped 1 cup bell peppers, chopped (I used a combo of red, green and yellow peppers) 1 tsp cajun seasoning 2 cups chicken stock 1 cup rice (i used white but brown would work as well) 1 tsp dried basil In a large pan, with a tight firing lid, cook sausage over medium heat until well browned, remove to a plate. Add chicken, salt, pepper & chili powder into same pan and cook until just browned, remove to plate with sausage (chicken does not have to be cooked all the way through). Melt butter in the same pan and then whisk in flour for a few minutes, to cook out flour taste. Add in onion and bell peppers, cooking for 4-5 minutes or until veggies begin to soften. Stir in cajun seasoning, chicken stock & rice and meats. Bring to a boil, then cover pan reducing heat to a simmer and cook for 20-25 minutes, or until liquid is absorbed Fluff jambalaya with a fork and let sit for 5 minutes. Sprinkle with dried basil, serve

Pear and Apple Cobbler

Pear and Apple Cobbler 2 pears 3 apples (I used golden delicious) 1/4 C. apple juice 1 T. brown sugar 1 1/4 C. white sugar 1 tsp. cornstarch 1/2 tsp. cinnamon 1 stick of butter 1 C. self rising flour 1 tsp. baking powder 1 C. whole milk Peel and chop up the pears and apples into bite size pieces. Place the fruit in a med. size pot over med. high heat. Add in the apple juice, brown sugar, 1/4 C. white sugar, cornstarch and cinnamon. Stir to combine and bring to a boil. Reduce the heat to medium and continue cooking until it begins to thicken (6-8 minutes). Remove from heat, set aside. Place the stick of butter in a 9x9 baking dish and put in the oven as it is preheating to 350 degrees. Meanwhile, whisk together the flour, remaining sugar, baking powder and milk. Once the butter has melted, remove the baking dish and pour in the batter all over the pan. Top the batter with dollops of the fruit mixture all over. DO NOT STIR. Return to the oven and bake for 20-25 minutes or until golden brown.

APPLE PECAN CAKE WITH CARAMEL GLAZE

APPLE PECAN CAKE WITH CARAMEL GLAZE 1½ cups of cooking oil 2 cups sugar 4 Eggs 3 cups of flour 1 tsp baking soda ½ tsp cinnamon 1 tsp salt 2 tsps vanilla 3½ cups Granny Smith apples (approximately 3-4 apples), peeled and chopped 1 cup of chopped pecans Caramel Glaze ¾ cups butter (1½ sticks) 1 cup light brown sugar ¼ cup milk 1 tsp vanilla Preheat oven to 325° In a large mixing bowl, add oil, sugar and eggs, mix until nice and creamy. In a medium mixing bowl, whisk together flour, baking soda, cinnamon and salt. Add to large bowl. Mix well. Add vanilla, mix well. Stir in apples and pecans. Pour into generously greased and floured tube pan (you can use two loaf pans in place of a tube pan). Bake at 325° for approximately 1 hour. Check using a tooth pick at about 50 minutes, and if it comes out clean, then your cake is done. If using the loaf pans, make sure to check it at about 50 minutes as well. Making the glaze In a small pan, melt butter over low heat. Stir in brown sugar and milk. Bring to a boil over low heat, then reduce to a simmer, stirring constantly. Let boil for 10 minutes, continue stirring. Remove from heat and add vanilla. Stir. Let cool. Once caramel glaze has cooled a bit, pour over the top of cake.
